I was recently invited to the first
TEDxAmsterdam and one of the presentations which made an impression was the one on the potential of eating more insects.
The talk was given by Prof. dr. Marcel Dicke who is an ecologist with a special interest in the relation between plants and insects. He is a recipient of the NWO-Spinoza award, also known as the Dutch Nobel prize.
The 4 arguments in favor of eating insects are:
1. No recombination of viruses harmful to humans
2. Optimal food chain conversion factor
3. Less waist for the environemnt
4. Optimal food value
A (temporary) disadvantage is our mindset around eating insects. I believe this can, amongst others, be overcome by smart food design.
A good example was shown at the conference were we could taste insect "bites" nicely presented in a
strawberrytree, with the best strawberrys in the Netherlands. Both local Dutch products close to where i live.
